A new lockdown is here, all the restaurant and bars are closed in The Netherlands. We work from home and we are not allowed to have more than three guests at home.
I invited my friend Kasia and my bestie Simona and her daughter Luna to have lunch together on Sunday and it is pumpkin season therfore…
Cutting the pumpkin the right way….
In a pot over medium high heat add 2 tbps Evo, 1 chopped carrot, 1 small shallot, 1 garlic.
Add the cut pumpkin in small cubes, 1 bouillon (Kallo), and boiling water, let cook for 20 mins.
When ready, take an hand blender and blend on high speed until desired consistency, garnish the soup with roasted seeds, parmigiano and black pepper
And I bake some bread too..
