Flat bread? yes please ♥

Do I miss bread? yes, I do… am I dreaming of bruschettas? All the time 😀

Perfect for a snack and a little more fun than your usual rice cracker this is my recipe for flatbread,  easy and ready in a bit more than half an hour.

I like it spicy and little crunchy.

Chickpeas flat bread

Ingredients

  • 150 grams chickpeas flour
  • 100 grams rice flour
  • 10 grams xanthan gum
  • 10 gram instant yeast
  • 1 tsp sugar
  • 1 tbsp olive oil
  • 100 ml water
  • 1 tbsp of mixed herbs I use chili, rosmarin, black pepper
  • 1 clove garlic

Instructions

  1. Mix the flours and xanthan gum.  In 100 ml of luke water dissolve the yeast add the sugar and little olive oil, combine it to them to make a dough.

    Sprinkle work surface with flour then knead the dough for a couple of minutes until it is smooth. Let it rest in the oven with the light on for about 30 minutes. 

    Divide the dough into 6/8 little balls and roll out on a floured surface. Roll it very thin; I use a bowl to make the circle shape.

    I use a crepe pan slightly oiled, and I let cook the bread for 30 seconds per part.

Every time I manage to make something that taste/resemble bread I feel like a million dollar!!!
