Broccoli & potato soup

Broccoli is full of vitamins C and B1, B2, B3, B6, iron, magnesium, potassium, and zinc! Plus tastes incredibly delicious!

This is one of my favourite soup, easy to make, needs few ingredients and ready in less than 30 minutes ♥

Ingredients

  • 200 grams broccoli
  • 3 potato
  • 1 carrot
  • 1 tbsp EVO
  • 1 clove garlic
  • 1 shallot
  • 1 parsley
  • 1 cube vegetable broth I use Kallo

Instructions

  1. Put the shallot and the carrot (chopped) in a pan with EVO and the garlic, let it cook until the garlic turns blonde.

    Add the potatoes (cut in small cubes), after 5 minutes add the broccoli (florets) and let it cook together for 5 more minutes. Take out a couple of broccoli florets and set it aside.

    Add boiling water and the cube of vegetable broth and cook for 5/8 minutes or until the potato is soft.

    I use a hand blender to make a creamy soup.

    If the soup is too thick add a little bit of hot water while blending or if it is too liquid add a tsp of maizena (corn starch).

  2. The final touch, stir-fry the florets you set aside with EVO and chilli flakes, I like to roast some seeds as well (sunflower, pumpkin etc..) 

For my vegan friends, the recipe is ready 🙂

For cheese lovers… plenty of goat cheese.
