Roasted pumpkin season
Pumpkin is good for you (and me)!
Low in calories, full of antioxidant, regulate blood pressure, helps to control diabetes and you can prepare many dishes with it.
Soup, pie, bread etc… here is a simple, yet delicious, roasted pumpkin recipe.
Roasted pumpkin
Ingredients
- 1 butternut squash
- 2 tbsp olive oil extra virgin
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp mixed herbs oregano, rosemary, thyme etc
Instructions

Preheat the oven at 200 degrees, cut the butternut squash in wedges, place it on the baking sheet, drizzle the olive oil and sprinkle the pepper & salt and herbs on top.
Cook for 20/25 minutes or when the corners are brown and golden
